Yes 18x10 will fit. If you you go with an offset from +20 to +30 you'll be fine depending on what size tire you choose. I would recommend a 235/40 or 245/40 depending on how low you are. You would need a fender roll though. If you want to run a lower offset its still totally doable. Even like 18x10 +10 if you run like a 225/40 or 235/40 with some increased camber.
EDIT: Also note that you could run a much higher offset like +40/45 if you want to have a meatier tire.

I'm looking to run a 19x9 +20 front and 19x10.5 +25 rear. I just got ordered coil overs, and im going to roll and pull the fender. So whats the widest tire I can fit. I am aiming for a 265/30/19 front and 295/30/19 rear is that possible? I seen some run 19x10 +38 with a 285/30/19 on the rear with no modification to the fenders.

will these fit? lowered on Megan coils, maxed out in the rear.
18x10 +25 all the way around with R 255/35 F 245/40 or 255/35 all the way around?
fenders will need to be rolled and pulled or just rolled?
or will these fit better with less work?
18x9.5 +35 with 265/40 all the way around?

you'll most likely have to shave your rear tabs too.

The 10 +25 will fit fine since the megans dont go all that low in the rear. A fender roll all the way around will be required in either of your scenarios. And if you're doing the same size wheel all the way around do the same size tire. There is no point of doing staggered if the wheels are the same size. But for the 10's I would run a 245/40 all the way around if you plan to be "slammed"

They won't fit, wrong bolt pattern. We have 5x114.3
Unless that is a typo on their end, but then I wouldn't buy from a place that can't provide accurate information on the items they sell.
