Put the bleed nipple in it's correct position, where there is an indentation in the thermostat housing. It's not imperative but it's correct.

Nope, I was doing bunch of other stuff. replacing all fluids, changing some gaskets, check and see if there is an exhaust leak, etc. and I got some stuff to do tomorrow so I expect everything to be done on monday. (car on jack stand now, and its already dark outside)

this is my second time replacing the thermostat, damn for some reason its a bitch to get that housing off (for me). Grrr, cut myself a bit

Car is back on the road, so far it seems to be fine.

What kind of data u guys need ? Before/After temp? Cruising temp ? Anything ?

I still have to jack it up tomorrow to do the Brake fluid swap (cuz its raining today, water = no good for brake fluid)

Apparently mazda has an updated thermostat design as well which opens lower and flows better...

How easy is it to change the thermostat? The dealership wants 2hrs of labor to do it.

I'd say twenty on mine since I don't have the battery in the front. So, maybe around 30 to 45 min, then you gotta add hours if you run into any problems. The reason the dealer wants two hours is once they punch there card and take their good old time pulling it in then getting all their stuff ready, on top of talking to everyone else also it will already be an hour.

All the data that you care to collect is good but, with you, I'm most interested in knowing how much heat is available through your HVAC system on a cold day (Or night).

There is no instructions, not like its needed. Since its the same as changing out the stock thermostat.

Would this reduce the amount of heat available from the heater during the colder months?

Probably a bit....it drops the "core " temp about 8-10 degrees The heater temp has never been a problem for me though....
