I have to say don't paint your calipers white for a couple reasons:
1) Color simply will never match / brightness will never match / quality paint will not match...
2) Brake dust will make you wish they were the completely opposite color...
3) It's not going to look as hot as it sounds
BUT if you do go ahead and paint them post pics.

The amount of brake dust depends greatly on the type of brake pads you use, you whole wheel can get covered after a couple days honestly. It's like when you run your finger over the top of a dresser that hasn't been dusted in a long time, and you get that film of dust? Yea same thing, your wheel has that crap & of course it will get on your calipers.
Ultimately its your decision, I just wouldn't do white if it were mine.

For what it's worth.... painted non fixed OEM brake calipers look like: painted OEM brake calipers that someone took a Krylon can to- no matter what color- gloss or matte.
Want bling in your wheel? Then buy some fixed caliper brakes.
Want a good caliper that does more than adequate work in hauling your car down repeatedly with fade free performance? Then keep your ugly OEM brakes or buy some fixed caliper brakes and watch the glossy paint fade and spendy logo burn off after the caliper sees some intense heat cycles.

Spray paint the OEM caliper. Step back and have a look at it. What does it look like? Probably looks like a spray painted OEM caliper, eh?
Lol. Whatever! Just do whatever makes you happy and be less concerned about what the internet thinks. Hehehehe.

Perhaps some illustrations will drive home my point.
Does this turd look better in white?
Or in gold?
Now how does this look in white?
How 'bout this in gold?
Hint: Turd=OEM Caliper No matter how much you try to dress them up- they are what they are.
