Troubleshooting this can be difficult if it only occurs weekly.
Here are a couple easy things I would start with:
1) Reset the PCM- Disconnect the battery for at least 10min.
Cars can be like Windows... just needs a reboot
2) Clean the TB valve- Use Carb Cleaner and a shop rag to wipe around the housing and valve.
I like to remove the 4 bolts to separate the TB from the UIM to clean all around (no need to remove the coolant lines).

I wouldn't think its the APPS (Accelerator Pedal Positioning Sensor) since it takes so long to reproduce the symptom.
And it doesn't sound like a "Limp Mode" if you're able to let off the gas and accelerate without problems.
But lets start with the easy stuff first and go from there.

There have been a few members with Traction Control Lights flashing lately....???MMmm

Although I don't have the answers, I am thinking of a few issues that may or may not help.

As we know each wheel has an ABS sensor for Brakes, now this sensor must also register wheel spin or loss of traction from a particular wheel to the PCM/ Stability Control (DSC)...Am I correct here Jon???...don't know what other sensor there is for Wheel Traction???

Also a YAW rate Sensor (box) under the Rear Middle Console .

Had a quick look in EPC and can't see other parts related to Traction Control.

I am wondering if Heat (you guys are having a very Hot Summer) has anything to do with this??.

I am also wondering why Mazda changed all the ABS Sensors (4) on each wheel and the YAW Rate Sensor under rear Console in the Series 2 RX-8??, also PCM is a lot different (mainly due to New Oil Metering) I have not heard of a "reliability" issue with these wheel sensors in Series 1 RX-8's, but, Mazda don't usually change these items unless there are performance or reliability issues??

Sorry, OP but I would do what Jon suggests first...

silverkillrx8...Just another thought...Have you driven through/over any Wet Creek beds or Muddy Roads lately, mud and dirt on wheel sensors?...or driven over branches or sticks that may have caught or damaged electrical wiring looms or connector plugs under car??..

Could also be a loose connection at a plug or loom, which could respond to air temperature changes, or a ground?

Yeah... these sensors monitor the wheel's rotation.
The rears use an inductive sensor similar to the e-shaft sensor, but I thought the fronts used a magnetic encoder.
I started thinking about this too as being a potential culprit, but I thought back to a couple years ago when I had a faulty wheel-speed sensor on my '01 F150.
At that time, I didn't have any issues accelerating like the OP mentioned... just a flashing light.
Not saying the 8 can't be different, but that is why I didn't consider it at first.
Figured its best to cover the basic/easy stuff first...
