yeah "you" could build an app that runs a little arduino board to run the ac, jut like a home automation controller. hell you could have the android app control some lego thing that uses micro controllers to physically move the selectors and temp/fan dials

Just a heads up, the first gen galaxy tab works great. I had it mounted on a window mount on a road trip. Ran fine.. But heres some iffy stuff.

My 3G would mysteriously turn off when I was using tons of data. I would have to reset the device to fix it. There were some other kinks so you may want to make sure the power button is accessible.

Also, theres "Google Car Home" for the first gen. I hacked it on my galaxy tab but it worked AMAZING.
