Unhappy Post Lowering Alignment Help

I recently lowered my 8 with the espelir springs from Auto RnD (Thanks). Anywhoo, its been about 500 miles since the install and I went to a local chain tire store here in Phoenix. They are telling me the only thing adjustable for an alignment is my toe adjustments. However, I hear you other 8 owners talking about fully customizing all your adjustments. Is this store just whack? Also could someone please explain toe, camber and the other adjustments, and maybe the stock settings? I really didnt want to go to my Mazda dealership, because I am worried about the warranty. Should I be? Any suggestions on where to go here in Phoenix?

not many people know how to adjust the caster and camber, or too lazy.

Yes and no. You CAN lower a car so much that you can run out of stock adjustment. My RB springs have taken a set (rear) and my camber adjustment is at the limit. It will require after market adjustable links to return my adjustability.
