Loss of power after adding 2 quart of oil
Title basically says it. Anyone ever experience this? Also the car won't shut off. When I turn the key to shut it off, everything goes off but the engine still runs.

what do you mean it won't shut off? You sure the engine is still running and it isn't just the fans? (they will stay on if engine temp is above a certain level and they can be quite loud)

I mean it won't shut off as in you can take the key out and drive it like normal.

It sounds like you've overfilled your sump and the engine is sucking oil in thru the intake. If this is the case then you need to remove any excess oil, clean your MAF and IAT sensors and clean the throttle body.
As far as the engine running with the key in the off position; has this been an ongoing problem or did it start after you added 2 quarts of oil?

You should NEVER let the engine oil get to the point where you need to add 2 quarts. You're killing your car.
It sounds like you've overfilled your sump and the engine is sucking oil in thru the intake. If this is the case then you need to remove any excess oil, clean your MAF and IAT sensors and clean the throttle body.

If the engine is running with the key out of the ignition, you have a short somewhere in the wiring harness. I'd expect that such a short would lead to the engine not starting at all, but it is theoretically possible to have the short literally behave like an old fashioned hot-wire, and if it's in the right spot, it could indeed bypass the immobilizer. It would be really freaky though.
And from the critically low point on the dipstick, 1 quart of oil will get a Series 1 (2004-2008) to almost the full mark. If you added 2 quarts of oil and it got to the full mark on the dipstick, you probably suffered bearing damage from literally running it out of oil. Your oil light would have been on for at least 800 miles, possibly as many as 2,000 miles. It would be a miracle that your engine still ran. It's more likely that you just added 2 quarts without looking to see how much was needed, in which case you over-filled the sump severely, and you will have a secondary mess now with a severely oiled intake, gummed up intake valving, and probably a lot of oil smoke or a rapidly clogging catalytic converter.
