But I digress. Point being, this is what we typically recommend because the price difference between XP8s and AX6s isn't all that much and it's a little extra insurance for those really hot days or for you guys running Road America that have to haul the car down from really high speeds after that 17 mile straight or however long it is
Hehe, yah, about 125 or so in a stock 8 on some of those straights..

Anyway so what would be the best choice for a mostly street driven car that sees maybe an hour of track time a year and about 5 hours or so of agressive back woods driving? The car sees maybe 3k miles total per year. Also low dust would be ideal. So is a bobcat good enough for that or would I need to go higher end?

Project Mu HC+ are excellent pads for use on track. These are also easy on the rotors. Rotors aren't cracking, but my anti-squeal shims are!

Street use, HC+ needs a little warming up. It squeals a little bit too. Time to order new shims I reckon.

Any opinions on EBC pads?

http://www.ebcbrakes.com

They suggest the "Red Stuff" for >200hp cars.

I have the redstuff pads, they take ALOT to get warmed up and really start braking hard, when they aren't warm they grab less than stock I would say. The positives are they are very quiet, very little brake dust, and when they are warm they stop on a dime, the negatives, you have to beat the sh*t out of them constantly to get them in their heat range, and they are pretty hard on rotors.
