Offset?

I am really dumb when it comes to rims and tires. I have NO experience with these. Could somebody please explain to me what the offset is? I am looking at getting new rims, most likely 19" but I am not sure. When I was looking at the TSW BREMMA (Because somebody in another post said they accept tpms?) I have the choice of:
Size PCD Offset
19x8.5 5x114.3/5x114.3 25
19x8.5 5x114.3/5x114.3 37
19x9.5 5x114.3/5x114.3 35

I understand size is the height and width, and I understand PCD is the bolt pattern, but I am unsure what the offset is.

What is the perfect offset range for 19x8.5 and 19x9.5 rims that will give you no issues whatsoever with rubbing and fitment, provided you have the correct tire sizes?

Use a simple formula. The magic figure I think is 28mm before rubbing (please correct me if I am wrong)

Stock is 8" and +50 ... ok.

If it is 9" then you have 0.5" sticking out (or 12.5mm)
If you have +40 offset, you have 10mm sticking out.

If the first sentence presumption is correct,
9" you can have +34 or more
8.5" you can have +32 or more.

I can calculate off my heart :p so I use this

OK, so what about the general suspension / load bearing of the wheels.

Presumably the running gear is setup to put certain loads through the rim. Anyway I'm asking as I am looking at getting 19x8.5JJ rims and have the choice of various offsets :

+35, +43

By my calculations, the stock rims have 150mm behind the hub and 50mm infront
With +43 and 8.5JJ this will be 149.25mm behind the hub and 63.25 infront
With +35 and 8.5JJ this will be 141.25mm behind the hub and 71.2 infront.

Now maybe none of this matters, but to me, the stock rims have a 3:2 ratio and the +35 a 2:1 - surely this must affect the handling, weight bearing etc

Or is it purely about the brake caliper clearance and not rubbing when turning etc
