Questions/Concerns about New Engine

I just got my car back from the dealer after they installed the "new" engine. Have some questions:

1. What is the break in period for this engine? Do I need to stay below a certain rpm? 2. The coolant light is still coming on and off. I'm assuming its the bad sensor issue as the temp needle stays the same. Shouldn't they have resolved this? I told them about it.
3. When in neutral, there is still maybe a half second delay between tapping the gas pedal and the engine revving. There also seems to be delay or hesitation to want to go sometimes at low rpm while suddenly accelerating. Are these things normal to this car?
4. And this is probably paranoia but how do I know for a fact that they actually replaced the engine? It looks new, but couldn't they have just cleaned it up and slapped on some coils, plugs, wires? The engine "feels" the same and the car doesn't seem to accelerate much better, although I haven't really wound it up yet.
