Hesitation in 1st/ oil ?

Hesitation in 1st/ oil ?
when i drive my car sometimes taking off in first gear my car like bogs... specifically when im going on my daily route its the SLIGHTEST up hill. and like while im turning on it my car jerks back and forth and almost feels like its dying...
also sometimes when i drive it randomly spikes? like pick up from all the way up to 3k will me sluggish then spike rev up faster for like 500rpms then go back to being sluggish
lasty when im reaching the 3000mile mark for my oil change i seem to be getting better mpg then i would if i had a fresh oil change... any one know why?
any help would be greatt
