Do the cars with cloth interior still have the same wiring around the seats and rear view mirrors as the cars with leather? In other words, does Mazda use different wiring harnesses for differnet models, or do they just have one harness and loose connections if accessories aren't used when building that car?

Yes, the wiring is different. The non-power seat-equipped models don't have the wires needed for the seats and the sport package doesn't have the wiring for the homelink mirrors either.
