I know ice works good but I don't know what that would do to your seat. The ice freezes and hardens the gum so you can just pluck it off.

Ice should work as Paulie mentioned, or you could try Goo Gone or Goof Off. Both can get rid of gum, though I'm not sure if it will do it without damaging your seat. Try a hidden area first to see if it's going to leave a spot.

Ice is probably the easiest, that's what my grandpa uses to take gum off his clothes.

I've heard that using the computer dust remover cans upside down works as well. Same principle as the ice (freeze the gum), but with no water. Then again, I don't know what the chemicals in that stuff would do to the cloth.

The best thing EVER is this orange spray (sorry, but I can't think of the name now), but it is at Wal-Mart by the oven cleaner. This is the only place I have ever found it. It is in a clear trigger bottle about 8" high. There are pictures of multiple uses on the front.
Not only does the stuff smell great, but removes anything without discoloring it and dries very quickly. I use it on my tan carpet, my old car's cloth seats (Jello spill), and on our cars when large or numerous bits of tar get on them. Even removes scuffs off shoes! We always keep a bottle handy. FABULOUS stuff!

The stuff inside the computer dust cans is liquid nitrogen use a cloth to pick up the gum after its frozen if you like to have feeling in your fingertips.

Far as I know this stuff doesn't do anything to fabric other then shatter it if it gets to near 0 degrees Kelvin (an impossibility for those that know physics/chem).
