What dont you like about your 8?
indeed, it seems the doors only stay opened once they are above a 55 deg aperture angle. this is hard to attain in tight parking spaces, it can be quite an inconvenience when you are carrying stuff in your hands and cant hold the door. not too much of a problem and you get used to it eventually.
other than that, I like everything else... maybe perhaps, a more solid transmission wouldn't hurt either.

Pretty much eveything I hate (which isnt a lot) has been said for instance : torque, gas mileage...but what I hate most isnt about the car itself its the haters in all the ricers..don't get me wrong its all hilarious to me but their repetitive remarks about the 8 gets old...
so do doughnuts around them then blow their doors off, leave them thinking "damn wish my ride was rear-wheel drive"

What really drives me crazy are the doors. When you push them open, they rarely catch and stay open in any position. Most of the time they bounce back and hit me as I try to get out, or cause me to be sandwiched between the door and the car for a moment. This is REALLY annoying. It always seems to happen when people are nearby and I look like a doofus trying to get out. Don't even bring up trying to get out when parked going uphill. Thank you for listening. I'm sure I'm the only one who cares.

We eat rice in the South.
A simple fix for the A/C: Above the engine, running parallel to the firewall is an aluminum tube about 5/8" in diameter. It's supposed to be cold and runs right over the engine. Get some heat-resistant insulating tape and wrap it up. Instant colder air in the cabin!
for me on the other hand, seems a bit time consuming for something that really isn't worth all the trouble, unless you have a lot of time, them more power to you.
if your talking about that circle thing on the dash next to the glove box, all i have is a plastic cover to match the rest of the trim
Rattling in and around the passenger door/right side of the dashboard. It's been driving me nuts the past few months. I have an 05 with over 60k on the clock if that matters.
Also the squeally brakes, even with brand new brake pads. They work nice though, so oh well!

No kidding, happened to me today at the grocery store, parked way out in the back 40 and was angry when I came out of the store and saw that someone with a trailer no less had parked next to it ... as I got closer I saw a sticker on the trailer that said "national corvette museum" so I wasn't quite as upset...

The "door" rattles are usually from the mirrors. Do a search and find numerous old threads on how to fix it. Basically one pops the cover off and puts some foam tape to keep the housing from rubbing on the internal parts. Easy fix.
