Does the basic Grom + BT dongle allow you to play music using the phone, or does it force you to use the steering wheel controls?

You can use the phone screen with Grom even if you connect with the iPod cable available.
If you are using bluetooth then you can use both screen and steering wheel controls and you can charge using the usb charger cable included.
If you are using the iPod cable then setting disk 1 on the head unit your phone screen is unlocked and above disk 1 you're locked.
