The little sticker on the driver's side hinge indicates rx8 tip scale is at
aroudn 3800 pounds. But I hear people claiming rx8s are around 3000-3100 pounds rather?
Then what the hellllllllll is 3800 on my door hinge?

The 3800lbs is Gross Vehicle Weight -- that's the maximum allowable weight of the car. Basically the car full of passengers. There should also be a Curb Weight written on it too, which for a GT 6-Speed should be about 3050lbs.

Without the sunroof and the navigation the car does slide in at just under 3000 pounds though. This is per a actual weigh in with the car very low on gas.

~2980 to 3100 depending on options

3800 = fully loaded using 180 lbs per passenger (x4 = 720 lbs meaning your car is 3080 lbs)
