PA RX-8 Issues. Need Help. Much Appriciated

I have a 2005 Mazda RX-8, Standard Transmission 6 Speed (obviously why I am here) (All Stock (for Now)) anyways, Heres a list of a few issues I believe it has, just doesn't feel as fast as it should be.

-Delayed Gas: After driving for maybe a half hour, it seems that when I come to a light, I goto put it into 1st gear and then when I goto give it gas, it seems the RPM's do not rise right away and there is a split second delay.

-Stalls: I know a guy who had an RX-7, I told him about the issue of my car stalling when the engine is doing too much work. When driving for about 5 minutes on the parkway, I goto throw it into neutral when going downhill, the RPM's drop as far down to 500RPM's then it stalls out on Me. Only way to prevent it is to keep it in gear. (I do use premium fuel)

Those are the two major issues.

The car does not seem to pick up fast as I would expect and it seems like it should be a 0-60 in 6 second car, but instead it seems to take its time picking up. Here is a list I had found showing the gear ratio's which about match mine. It just does not seem as fast as it should be and seems like it should pick up a lot faster, especially if you are racing. I have seen crappier cars pick up faster than the RX-8 unfortunately. Any Idea why it just doesnt seem to pick up as fast as it should? I usually try and shift when hitting 4000rpm's

Just guessing, but the culprit could be worn out ignition (but you're not getting misfire codes), clogged cat, or failing fuel pump.

Once it's fixed, if you want to really enjoy this car shift at higher than 4000 rpm.

The car essentially has 2 engines. The 1,000 to 4,000 one, and the 5,000 to 9,000 one. The second one is a lot more fun, and using it keeps the engine happy. BUT, I suggest you get the ignition sorted and the CAT checked before really getting into it.
