I completed my first year in Road Racing with my Falken Azenis 615 but for next year I want to get into the real thing with some Kumho V710.
Do somebody know if the Kumho V710 245/35ZR18 will fit well in my Enkei RP-02 (18 inch)?

Well if that is the case I would need to get other wheels. What would be a good bundle with the V710? maybe go lower to 17 inches

You might want to ask around about the 710's on a road coarse. They supposedly get kinda greasy when they get real hot.

that Hoser size will fit fine, but you'll probably want the R6 unless you're a smooth driver running short sprints in cool weather. A6 is an autocross compound intended to heat up quickly on short runs

Dont forget the workhorse of R compunds --the Toyo RA-1'S. Many differant sizes. But you need to get wider wheels than 7.5. for any tire on the rx8. at least an 8" wheel.
on the road course a shorter tire 40 series 17" or a 35 series 18" plus light weight wheel/tire makes a huge differance. do some reading

The width is 7.5 .
The Boxster guys and VW R32 guys run those tires on 18X7.5" wheels all the time. Your tire guy will hate you but they will fit with some work.

What do you mean by "road racing"? Lapping days or racing? 20-30 minutes at a time or more?
In any case, the autocross trick of fitting as wide a section as possible on a given rim width doesn't translate to track use, imho. The loss of turn in and "squirm", not to mention loss of longitudinal contact patch, all are issues when you start compromising the sidewall profile. Better to be a little more realistic and stay close to the manufacturer's reccomended rim specs. I'd run the Hoosier R6 in a 225 section width, personally.

Cool, you run in Puerto Rico :)
Given the course layout, about 20 minutes on course per heat, and the fact that you're going 40 laps a day, that the R6 Hoosier would be a good tire for you to consider, in a 225 section width. That way, you don't have to get new rims, if you don't want to. I'd bet the Kumhos would be every bit as good for your use, but then you'd need new rims to fit the 245 effectively.
