What's not-to-miss in Vegas?

What's not-to-miss in Vegas?
Hola west-side.
Planning a trip to Vegas in 3 weeks and would love some input as to what's not to miss. Spent 6 weeks in Vegas 3 years ago so fairly familiar with the Strip area, etc.
Going with my wife, we're spending a week there and we have a car. Planning a trip to the Grand Canyon and open for suggestions for good food and any crazy things only LV could offer

Me and a buddy went to vegas a couple weeks ago and I was generally clueless on where to go before we went. The absolute coolest thing we found was the Carnival Court bar. It's an outside bar behind the Harris. Now, granted it's outside it will probably be over 100 degrees. I live in Arizona so it didn't bother me but the show quality with the addition of getting a few drinks in you from the bar makes it completely tolerable. It's an all flare bartending bar and they have pretty good live music, too. Check on youtube for Carnival Court to see some of the tricks. The shows are interactive and they like giving out free shots to everyone at the bar. Also you definitely get what, if not more than you pay for alcohol-wise.
