offset for 18x8 and 18x7.5

offset for 18x8 and 18x7.5
I did search, and i found a few posts, but I am still unsure what the real answer is.
stock is 18x8 +50 s0....
if I stay with the 18x8 how low/high in offset can I go, +40?
if I go down to the 18x7 how low/high can I go that way? +38?
looking at a few 18x8 at +42, some at 40, etc...
just wanna be sure, no rolling fenders for me..
