Phantom Coolant light

Phantom Coolant light
So last summer (my first with the 8) I would be cruising on the highway at 65-70 mph and the coolant light would come on if I maintained that speed for any length of time. I topped off the coolant and then it pretty much went away the rest of the summer.
Bear in mind I live in Texas, so it's typically 95 degrees here.
Now, when I am driving in the same conditions the coolant light has been coming on, only the tank is completely full. If I shift to neutral and coast for 30 seconds or so the light goes off. I mean obviously the engine thinks it's getting too hot, or not enough cool air is coming in. My question is why? the coolant is topped off, my temperature gauge never really moves above normal operating temp...
What can I do to fix this? Think it is worthy of taking to a shop? Anyone else had similar experiences?

Yeah mine started with the same ****. Its funny that it started as soon as I picked it up from the dealer for an engine replacement. I just deal wih it. It comes on for a couple seconds now and then when the engine is under load.
