If you search around here, it can be caused due to a faulty coolant sensor (In the reservoir tank). Mine tends to flick on when at higher RPM's for prolonged periods... Nothing I am personally concerned about.

But definitely check out the sensor in the tank

Get the faulty sensor replaced or unplug it. When you unplug it, just make sure you check the coolant level daily.

No. Don't just unplug it.

Get it replaced if it is faulty

If it's faulty, you have to replace the whole reservoir, not just the sensor. Not too difficult, but may be more than someone is willing to spend (even if they DIY).
If you unplug, do as monchie suggested and make sure to check your coolant levels often

Any more often that we used to check before they started putting that kind of warning light into cars?

every other fuel up would work. Heck, you should already be in their checking oil! Although, that is for the paranoid. Just make sure to take a peak every now and then...

Yup. A glance at everything whenever under the hood.

Pretty easy these days when all of the under-hood fluids except oil are in translucent containers. Remember back when you'd have to undo the cap on every reservoir and peer into the hole? And you couldn't check coolant until the car was cold, lest you scald yourself?

We still do that with our military vehicles. I keep asking them to "Get with the times"...
