I honestly wouldn't think so, you may be paying out of pocket for those.

The coils aren't covered under the 36k mile bumper to bumper warranty.

If you are planning on keeping your car for 2-3 more years I'd say buy a set of BHR coils and call it a day.

Any tips on gutting the cat and will the O2 sensor still work normally in a gutless cat?

There is a DIY search in the DIY forum for it

The car will work normally, but the check engine light will be on since it detects the cat isn't there.

My 05 GT Manual has been doing almost exactlty the same.
On 2 occassions it began hesitating and lurching quite wildly.
Two common things were present on both occasions, the temperature outside was very hot and I had been driving for more than an hour with my AC was on.
There has been no problems at all the next day and afterwards, the car pulls fine all the way past the beep and no reduction in gas mileage.
She has about 95K kilometres = approximately 44K miles on her, I am the second owner and I do not believe the original coils have been touched.
I will be ordering the BHR coils and wires and having them installed right away.
