Coolant Light Randomly Illuminates

I have a 2007 manual RX-8 with 50,000 miles on it. Since I bought the car with 45,000 miles on it I have been experiencing a problem with this light. When I am just cruising in fifth gear going between 40 and 50 mph, the coolant light will turn on. The light wont turn off until I hold down the clutch for a few seconds. Any ideas what could be causing this? I've checked the coolant and filled it but the problem still occurred.

Their problem occurs after "spirited driving." Mine occurs after driving like a grandma.

You can replace the bottle or unplug the sensor
