SC coolant light

I wanted to see if anyone could help my figure out why my coolant light came on today. I hit the interstate after work as usually and while going up a slight incline I noticed my coolant light was on, but the car was running normal and the engine wasn't overheating. After maybe about 5-7 miles the light disappeared and didn't come back on. Once I returned home I check the coolant level in the reservoir and it was filled. Its there something I'm missing here?

Search. This is a common problem that involves a faulty coolant sensor that basically soaks up coolant as the temperatures get hotter causing inaccurate readings.
