All the way to the top is too freakin high! Did you not even open the manual for this car?
There is a MAX line on the coolant bottle.......even though it's hard to see.
In terms of your coolant issue..........do an "advanced search" on "coolant bottle" and you will see that the sensor is prone to failure. You should still be under warranty, if so......I'd take it in. Usually this starts at high rpm's and once you let off the light goes out. It gets continually worse until it finally stays on all the time. If that is what you are seeing, then it's the sensor. Your choices are either get a new bottle, or take the entire tank out and flush it real good. There are threads on that.
BTW.......if you continue to fill it to the top, then it's simply coming out the overflow tube, which if not extended will drip onto your power steering connectors and before you know it, you will have power steering issues from dirty connectors.

Water spots................well...............clay bar and then a good waxing will take care of that. Available doing a search as well.

the 07 has a problem with the sensor in the radiator reservoir.... take it in to the dealership and they will replace

The water spots..... try using a clay bar treatment, I use Zaino, but mothers or meguars will do the same ... just be sure to follow the directions.
