So I am almost ready to send these out to the powdercoater's, but I was wondering about the part shown below indicated by the arrow. Will this need to be removed or should the heat from the oven not be a problem? Thank you in advance!

Rear

Looking to buy a set of rear caliper pistons for my 07. Im pretty sure these are all the same and compatible throughout all the model years. They arent sold separately, so if youve got some calipers around you arent using and can help me out, please let me know!

Steve -

the A-1 Cardone remans from Rock Auto specifically say with metal pistons ($50 per caliper). Are the metal pistons vs plastic pistons the only real concern with the calipers being of good enough quality to use in a track-type setup?

Yes. The only other parts that are replaced are the seals, dust boots, and bleeder valves. Those are pretty much standard across the board. But, you would not want polymer pistons in play when brake pad temps can reach over 800F on the track.
