If they haven't been found yet, the thief/thieves are probably experienced and have stripped the car at this point. Stealing and stripping RX-8s is stupid really because there simply aren't enough of them to make it worthwhile, but I guess it happens. Keeping an eye out on eBay and any local swap meets, car meets, or flea markets that sell auto parts is the best way to track what happened, but chances are good if you haven't found anything yet that it is simply gone. Press your insurance and make the best out of a bad situation.
I would be more inclined to believe either:
1 - It was towed legally and the information recorded wrong, so it is sitting at a lot somewhere without anyone realizing it (Like what happened to the Ford Fiesta that blogger had)
2 - If it was actually stolen, it was probably stolen by a corrupt towing company, and it probably wasn't stripped. While there is nothing specifically targeting 8s that I am aware of, a fair number of stolen cars, especially higher end cars, are kept intact and shipped out of the country to buyers....not unlike Gone in 60 Seconds. To Somalian pirates, Nigerian scammers, etc... an 8 would be seriously exotic.
Jersey City is pretty much auto-theft central. One statistic I heard said that Jersey City is the single biggest destination for stolen vehicles in the US, mostly for shipping out of the country.
