I use a Garmin 2610 on my motorcycle.
http://koczarski.com/Motorcycles/ST1300/2610/2610.htm
I'm sure that would fit just fine on the dash with one of their bean bag bases or a RAM mount. Not as big a display as the factory unit but does all the auto routing and with a 2GB memory card holds all the detailed maps for the USA and Canada!
I used my Garmin 60C the other day in the 8 to find someones house and it work fine. Great reception up front with the sharp angled windshield. Plus, you can carry a 60C around with you hiking or geocaching. http://geocaching.com It has a fixed amount of memory though and could only hold a few states worth of detailed maps.

I use a garmin 2720 on my bmw that I will move to the rx8 - if I ever manage to get one! It cost me $800 new and is fantastic. While it doesn't have the oem look and has a speaker on a wire to the power outlet, it is really nice to use. One of the 8's I tested had NAV, we couldn't even get the system going - what a pain that controller was compared to just touching the screen.

If there is no CarPC in your future, but you want an integrated nav system...
Alpine touch screen

Alpine navigation

Mount it in the nav tray like Rotary Rasp did for his CarPC or if you can get one... mount it in the stock nav dash panel (swap out the stock screen).

I have the same StreetPilot. I love it! I opted to get it instead of the stock navi system.
It ran me around $1200.

i use my Dell X3 pocket PC with the TomTom software. Iv'e gotta admit.. GPS thing isnt 100% "perfect" ( i'd say about 98% perfect). but i guess what your paying for is the added insurance that you WILL get to your destination even if you have to take the long way... you WILL get there.

I just purchased a Garmin nuvi 350 and I think it is great unit. It's about the size of a deck of cards, completely touchscreen (just a power button), excellent batterylife (rated at 8 hours), a bright backlight and decent speaker built it. You can have it talk to you in different languages or different accents and it announces street names as well as distance to the next turn. I haven't purchased it yet, but you can buy an adapter that plugs into the antenna input from the radio that will give you realtime traffic info and automatic re-routing around backups. Well worth the $899 for the unit.
