More important is why is it low!! I have had many rotary engines and if it is low where did it leak too? The overflow or expantion tank, is it empty? Was it ever checked before? You have a sealed system and when the water gets hot it goes into expantion tank. If you have a leak somewhere it will empty out and then start empting your cooling system. Find out where it is leaking. You should not have to be adding water. Mix it according to the coolant instructions. Do you see a puddle under your car? How much water was missing?

My coolant light comes on every now and then too. It kinda freaks me out considering how much I love my car and try to take care of it. I've never seen a puddle under my car and I do walk-arounds every time I drive her.

It's not something that just happens, but yes, if something is wrong it is possible. If you find an indication of engine oil in your coolant area it could be an indication of an engine or radiator problem. When you check your oil, it will have more of a "chocolate shake" appearance.
