More important is why is it low!! I have had many rotary engines and if it is low where did it leak too? The overflow or expantion tank, is it empty? Was it ever checked before? You have a sealed system and when the water gets hot it goes into expantion tank. If you have a leak somewhere it will empty out and then start empting your cooling system. Find out where it is leaking. You should not have to be adding water. Mix it according to the coolant instructions. Do you see a puddle under your car? How much water was missing?

My coolant light comes on every now and then too. It kinda freaks me out considering how much I love my car and try to take care of it. I've never seen a puddle under my car and I do walk-arounds every time I drive her.

You may want to ensure that you arent getting any coolant into your oil. That would be bad.

Is it possible that coolant/water gets hot enough to evaporate off?

It's a closed system, so unless you overheat the engine causing the coolant system to exceed the 16 psi pressure that contains the coolant in the system, it ain't gonna evaporate. Overheat the engine to the point of overcoming the containment and yeah, it will likely "evaporate" in a pretty violent manner.

It's not something that just happens, but yes, if something is wrong it is possible. If you find an indication of engine oil in your coolant area it could be an indication of an engine or radiator problem. When you check your oil, it will have more of a "chocolate shake" appearance.

Overheating the engine past 16 psi will cause the water to evaporate out of the pressure cap, causing you to lose liquid. But as long as the cap is working correctly, the system will remain at 16 psi, though liquid will be lost. If you have a hole or a leak on the other hand, the pressure will instantly want to drop to zero inside the system, causing an ole faithful type explosion.
