Question Thermostat

My rx8s water temp usually hangs around 210 which in my opinion is a little hot, but then right when it hits 210 it drops drastically like it usally goes down to 190 ish. Does this seem like a stuck thermostat? And I know they make cooler thermostats but would it benefit my engine or make it run too cold?
