RX-8 Stalling after revving

Hi guys, Very new to the RX-8 world, Im Dobbo and I'm from the UK and i recently got a none running project RX-8, i have managed to get it running again with no check engine light. However, once running and at temp, i rev the engine and it falls bellow idle and stalls, i can fight to keep it from stalling but it is very tedious and takes a while to get it back to idle doing this. Im not fully sure what has been changed on the car. Any help would be much appreciated. Thanks Dobbo.

Will the engine restart immediately after stalling or do you have to wait until it cools down to be able to start it? Stalling when at normal operating temperature is indicative of low compression. I would advise you perfect a proper compression test with a rotary compression tester to be sure you are working with a good engine no need to throw money and parts at a tired engine.

What did you change to get it running?
How old are the ignition coils, wires and spark plugs?
Any obvious open hoses or vacuum leaks? Is the intake original?

Removed old fuel and replaced. Charged the battery. I know the Cat was replaced before i got it. Unsure but they look clean ill search through papers. No obvious leaks and intake is original.
