I am looking to test the coils on my Formula Mazda Racecar (RX8 rotary motor). We run the stock coils from the RX8. Is there a coil tester I should buy or is there a step by step method to do this using a multimeter?

grab a factory service manual, there's instructions in there on how to test with a DMM. there's one scanned online somewhere, but you'll have to search.
