but the oem one is soft and aftermarket ones are stiffer and can eliminate a lot of body roll.

Uh, keeping it sway bar related...

I've seen people recommend upgraded anti-roll/sway bars as the first suspension mod, because it supposedly doesn't hurt ride quality when going straight. It only helps stiffen the car by minimizing flex during cornering, correct? Can anyone attest to that?

Yep, that's generally the right idea. Ride quality will suffer if you're on really bumpy roads though.
