So how bad is it if the oil gets overfilled? I'm pretty sure the dealership overfilled on my oil change last week. I can't confirm this though because the car immediately went into storage and I'm in a different state.

Yes it does, but we all know the reason for that - to help Mazda meet their lineup MPG averages.
Warm up and then wait five minutes or so after shutdown prior to checking oil level has been the manufacturer's recommended procedure for every car I've ever owned/used in over 40 years now. So ...

I can't vouch for how much difference there's going to be when cold (although it should be fairly easy to test), but I also see no reason not to comply with the manual in this. My rule of thumb for my cars is always to follow the manufacturer recommendations unless I have a very good, and well researched, reason to do otherwise.
