I can turn DSC off with an aftermarket steering wheel. What the PCM needs is the steering position sensor which you don't need to remove at all.

If you are just replacing the steering wheel, no, it shouldn't affect your DSC.

I don't know of a way to get rid of the airbag light.

Although ultimately it is your choice, I wouldn't recommend an aftermarket steering wheel on a street driven car since you'd lose the airbag which protects, among other things, your neck on a collision.
