Because if you are going around a corner really fast and let your clutch out too late (ie. into the turn), you could spin out because the downshift can unsettle the car. This would only really happen at track-like speeds.
I plan on practicing this myself. In limited time trying it out, it's pretty stinkin hard. |

Yes, it's very important to drag the clutch on the track! It's the only way to kick ass.
