ive been noticing that my windshield fogs up quite easily. even with the windows down, very humid temps outside, climate control off. any ideas on whats causing this? when i use defrost it goes away, but when i turn it off it comes right back.

use a good quality cleaner on the inside of your windshield

Clean surface has less particulate contaminantion for water vapor to cling/condense on. If that alone doesn't help, put the fan on low with windshield defoster (without AC on if you don't want to run it) &/or crack the front windows a tad to get some air moving across the inside surface of the windshield. After that its time to use the defroster with the AC engaged but not necessarily running cold. Air from the AC is dry and will keep moisture from forming. Too much cold air and you'll start getting moisture on the outside surface of the windshield.

rx8s are pretty hot inside which makes things worse.
