Now it works. Not a great move, but a nice combo. I believe I would have died in that game.

The guy parried every single hit that came at him. Instead of holding back on the stick and taking small amounts of chip damage, he tapped back on the stick every single time to perfectly block the super combo. The timing it ridiculously difficult. Then, he turned around and won with practically no health left.

if he was parrying everything how come he had almost no health left?

He took all the damage before the super combo. He was at no health. Therefore, if he didn't parry, he would have died to the chip damage.

Oh, I see what you mean now. I meant to say that he parried every single part of the super combo. Not every hit that came at him in the actual round.
