I love em--I went to undergrad in New Orleans, and they are easy to get here in Houston. and yes I suck the heads--of the crawfish.

I had a pet crayfish when I was little. I can eat them, but I really try not to.

A little off topic, but has anybody tried this trick with a captive/pet live crawfish?

Put the little bugger in a shallow container filled with water.
Place iron fillings in the bottom of the container
Let sit overnight
Next day, carefully hold a fairly strong magnet over the poor guy and watch him roll over

explanation -- Apparently, crawfish shovel sand in their mouths, so they can tell which way is up. When the iron fillings hit the top of their mouths, they assume they are upside down and attempt to correct the problem. My High School Anatomy & Physiology teacher taught us this trick.

The green livers are actually better tasting than the tail meat. It has a buttery taste. but no texture. Next question-Do you suck the head of a lobster?

No, but I do eat the green stuff.

I grew up in Mississippi. During crawfish season it would be an every weekend thing for me and some of my friends to get 40-80lb of crawfish, a keg of beer, boil the suckers up and eat them/drink beer all day long. It was a party foul if you did not suck the heads -- that is the best part!!!!

I can not get them live here in Maryland, or at least I do not think I can.
