You set the oven to bake, but it's called roasting when cooking meat, as opposed to bread. The Pilgrims didn't have ovens so they really did roast the bird over an open fire. btw: they didn't have chimneys either (invented after 1620), just a hole in the roof. Do a search for "judying turkey" on google. It, in short, is rubbing the bird with salt and wrapping tightly for three days. Then cook hot (425) for the first 1/2 hour followed by 325 till finish.
